Delicious food I come across...

CHICKEN SALAD SANDWICH



Over the long weekend, I visited Santa Clara University in California on a recruiting trip for running. I ate this sandwich at a marketplace called the Farmer's Pantry, located in Benson Memorial Center (which is pretty much the university's food court for the students). I became a major fan of this place because I had the options of choosing anything and everything I wanted on my sandwich. I decided to get chicken salad on potato bread, with lettuce, cucumbers, bell peppers, and american cheese. It was delcious! Benson had many healthy options to choose from, so this one only one of many!

BACON WRAPPED STEAK


I had this delicious meal for dinner the other night. My mom grilled bacon wrapped steak from Costco and it was very flavorful. Then she roasted up some asparagus on the side, seasoned with pepper and some herbs. Lastly, the miniature golden potatoes on the side were amazing, and were seasoned with the same herbs used for the asparagus. They had a great texture inside as well. Generally, this was a solid healthy meal filled with protein, carbs, and vegetables... perfect fuel  for a morning run the nexrt day!

MANUEL'S TAQUITOS

Last week I went out to dinner with my family. The usual go-to spot for us is Manuel's, a mexican food restuarant located on 28th St. and Indian School Rd. It has a very comfortable environment, and I like it because I can go in casually. Surprisingly, I was not feeling that hungry that night, so I just decided to get the beef (or chicken) taquitos off the appetizer menu. They were very good, and perfect for me since I was not that hungry! It may be  hard to see in the picture, but the meal contained four taquitos, and layered underneath was lettuce, cheese, and guacamole. All these ingredients together spiced up the meal!

SALMON
I am going to be honest, this meal was absolutely amazing! My mom had decided to make roasted salmon, green beans, and corn for dinner. The secret was definitely in the corn and green beans which were roasted in the oven. Then salmon, on the contrary, was cooked on the grill, and was super good! This dinner was a great way to make the week more enjoyable for sure!

INDULGE BURGER

On Friday night, my friends Tommy, Katie, Dalton (pictured above), and I all decided to go out to dinner. We chose Indulge Burgers, located on 10392 North Scottsdale Road. In simpler terms, this burger place allows you to make your own burger! You can view the menu here. I chose to get a 2/3 lb. beef burger with american cheese, baby greens, roasted peppers, pineapple, and boiled egg slices. I decicded on Brioche bread for the bun (which I came to discover is just normal bun bread), with some ketchup. This came out to be $12. 50, and was TOTALLY worth it! The burger was cooked medium-well, and the pineapple really added some juiciness to it.  I had never tried fruit or egg on a burger before, but I am really glad I did! I would stongly suggest eating at this place because it is very easy to get what you want on an individualzed burger. I will definitely eat here again. However, since we came on a Friday night without a reservation we had to wait for about 20 minutes, but it was really no big deal. So if any of you want to eat here, reservations never hurt!

ORANGE CHICKEN


This is another dinner creation of my awesome mother. She prepared edamames, white rice, orange chicken, and pork fried rice. The orange chicken was very tender and had a perfect amount of glaze. The white rice accented the orange chicken, and the edamames were a nice side dish for the chinese-style theme. The pork fried rice was great as well, with shredded carrots, brown rice, peas, and small pieces of pork. In fact, this meal was so delicious I had three servings! My mom made white rice using Minute rice in a rice cooker, and the orange chicken, edamames, and pork fried rice were all from Costco. She simply cooked them up and made an amazing dinner with a great presentation!

FRENCH TOAST BAGEL


I enjoyed this delicious bagel after a time trial run on Saturday morning. It may seem like your avaerage bagel, but be prepared BECAUSE I'TS NOT!!! Holding it is my friend and teammate, Sarah Fakler, (the same Sarah who I made fried icecream with in the How to Make.... section). After practice, we all went to a bagel place called LOX Stock and Bagel, located on 7353 N Via Paseo Del Sur, in Scottsdale, AZ. After much debating, I chose a french toast bagel with honey whipped peanut butter. You can see all the bagel/ toppings possibilites on the menu! They have other interesting choices, including the chocolate chip oreo bagel which is very good as well. LOX is a great place with extraordinary bagels!

TERIYAKI STEAK


Another creation of my mom! She whipped up some teriyaki marinated steak with steamed vegeteables and small golden potatoes. They were seasoned with a special type of spice called Herbs and Provence, which added a ton of flavor! The steak itself was perfect because it was cooked medium-well (my favorite) and had no fat on it. The vegetables tasted very fresh as well! Definitely an awesome dinner not sold at restaurants! 

SAUCE ROAST BEEF PANINI
I enjoyed this roast beef panini at Sauce, located on 742 East Glendale Avenue in Phoenix. It is an itallian restaurant/ to-go place that serves pizza, paninis, and pasta.The roastbeef panini I chose was delicious, with a great amount of meat! It also contained lettuce, cheese, and tomatoes, as well as a special sauce that was very good. I also loved the toasted bread! A great recommendation for anyone who loves sandwiches!


TILAPIA


My awesome mother decided to make tilipia, roasted corn, and a side of pasta for dinner. The fish was delicious, and very tender. I especially liked it because it did not have the usual fishy taste. The outside "layer" made the fish taste way better since the texture was so different. It was the first time she had ever made it, so I would definitely qualify the tilapia as a successful dinner! The corn was roased in the oven, and was quite spicy (but good nevertheless). I am not sure how she made the pasta, but it was equally delicious.

SIRLOIN STEAK
I was able to enjoy this amazing steak this past weekend at a restuarant called Durants, located on
2611 N Central Ave. I ate here before prom, and it was delicious! The steak itself was 12 oz. and I had it cooked medium. I was surprisingly pretty full half way though, but I was still able to finish it all. It was definitely filling! The baked potato next to it tasted good as well, except I did not eat that much of it since I was so full from the steak itself (the garnish on the plate was much appreciated as well). We also got salad before the dinner, so I think that is what contributed to me being full. Overall it was a great, fancy steakhouse, and I would eat there again! The meals were a little pricy, but as a formal dinner that was expected anyway. Definitely a great beginning to a fun night!
