MAKE YOUR OWN PASTA
Once again, I enjoyed this pasta dish at Santa Clara University. This restuarant was called Sauté, a versatile Mongolian-style inspired grill where you can customize your own pasta, stir-fry, or tossed salad using fresh vegetables from Farmer’s Panty along with various meats and grains. This was a fun experience because I love choosing whatever goes into my food. Therefore, I got a bowl and added corn, peas, broccoli, chopped red potatoes, black beans, and artichoke hearts. Then I simply went up to the counter, where I chose original pasta with marina sauce for my various ingredients to be cooked in. It was awesome because they just cooked it up for me right then and there! It was a great poriton size, and made for a lovely lunch! Plus it made for a perfect pre-run meal which we had to do later in the day.
FIVE CHEESE ZITI AL FORNO
I had the pleasure of going to the Olive Garden last week with my mom and brother for dinner. I chose to get the Five Cheese Ziti al Forno, which was ziti pasta in a five cheese marinara sauce, baked with a layer of melted Italian cheeses. In simpler terms, it was normal ziti pasta with what tasted like a mix of marina and alfredo sauce. I thought it was really good, but a little too much sauce. Before the main course we had their signature salad with itallian dressing, (as seen in the background) which is a necessity whenever you are at the Olive Garden. Overall the Olive Garden is a great place to get some solid carbs before races, so I try to get something different every time if I can.
SHRIMP PASTA
This was a great dinner during the week! My mom decided to make shrimp pasta, which is really just linguini noodles with cooked shrimp, peas, and alfredo sauce. It may sound a little strange, but it is really good. I have to admit that I am not the biggest fan of fish, but the shrimp tastes great mixed with the alfredo sauce and noodles! This would be a great dish for anyone who does not mind fish, because you don't have to love fish in order to try it.
POTATO AND GREEN BEAN PASTA
This is another lovely pasta dish made by my mother. It consists of linguine noodles, string green beans, and small, diced potatoes. This made for a great contrast of flavors, and there was a natural "sauce" provided by the green beans and potatoes after they were cooked together. It was delicious and a perfect meal to get in all the necessary nutrients!
